This summer we are trying out a CSA for the first time. We are splitting a half share with Timi and her roomie Lisa, which is still plenty of food for us!

In the past few days I have tried a couple of new recipes to use some of these wonderful veggies up! We’ve also been eating a lot of great, fresh salads. The first week we got our CSA I also tried a new recipe for pico de gallo chicken quesadillas. They were delicious but took quite some time to prepare.
I had never eaten swiss chard to my knowledge before, and had never cooked it. Right after we got it, by chance my friend Kate posted about swiss chard on her blog! She linked to a recipe for hot swiss chard and artichoke dip, so I tried it out. It was a lot of work for a dip, but it was delicious. At least it was a lot of work for me because i’m not used to chopping up so much.
Today for dinner I combined a couple different recipes (one from the CSA newsletter and one from Real Simple) and made Chicken Bok Choy Stir-Fry. It was delicious!
Tomorrow we get week #3 of CSA goodness. I’m hoping for some more strawberries. 🙂
